Home Made Rhubarb Pie

It has been a very wet Spring here in Utah. The weeds have loved it. They grow so very fast. There is one vegetable that grows as fast as the weeds. It is rhubarb. Our rhubarb plant is very big. If other vegetables grew as fast there would be a lot less food shortage problems.

Last Saturday I cut some of the rhubarb. I didn’t make any difference to the plant. You could not tell that I had cut any. After bringing in I washed, then diced the rhubarb.

Then my oldest daughter came by. Together she and I made an open faced rhubarb pie. We made it from a recipe we found on the internet. It was a simple recipe, with rhubarb, sugar, tapioca, butter, and a little flour.

The pie was delicious.

Working together with children is a good way to strengthen the family. It is a good time to talk and laugh together.
